How would I go about being an Italian interpreter?

I speak Italian fluently, and Spanish not as fluently, but still well, and I want to eventually become an Italian interpreter. I plan on getting my undergrad degree in Linguistics and Italian, all one degree. I hear that learning German helps specifically to get into Italian interpreting. My dream would be to one day work for the UN or the EU. Any advice? Suggestions? Anything helps.
