What's the best olive oil for dipping bread?
If you want a plain olive oil that is flavorful on its own, you'll have to spend a bit to buy a high-quality extra-virgin olive oil from the south of France or from Tuscany in Italy. Those two regions seem to produce the most flavorful extra-virgin olive oils. If you're looking to make your own infused olive oil, then almost any brand of extra-virgin olive oil will do, since the herbs and/or garlic will overpower most of the taste of the oil. You'll still want an extra-virgin oil, tough. I never use anything less than extra-virgin olive oil unless I'm deep frying something, or searing something at high heat, like steak.
